Cotswold Hogget Lamb Chop x2
Our Cotswold Double Lamb Chops are cut from Hogget lamb and dry aged on the bone for 10 -14 days in our unique Himalayan salt chamber. This draws the moisture out of the meat whilst the salt gently impregnates the meat, creating a salt marsh effect and producing a unique flavour.
Hogget is our preferred choice when it comes to Lamb products. Being slightly older than Spring lambs at approximately 12-14 months of age, the animal has been allowed to mature in a more traditional and natural way. Longer grazing time produces a happier and healthier animal, resulting in a perfect combination of tenderness and deeper flavour!
